White truffles from Alba are known to smell delicious, with a slight hint of garlic. They have a smooth surface, an almost golden colour and ripen between October and January. At twilight, “Trifolai piemontesi” (truffle hunters) search the slopes of the Langhe with their dogs. Pigs cannot be used for truffle hunting in Italy as they damage the tips of the root when they dig them out. Our trusty “Trifolao” delivers fresh Alba truffles to Vals. Our Head Chef Ulf Bladt will spoil you with home-made pasta and Piedmont specialities, generously sprinkled with the white gold by our Maître.
